SUMMARY:How to Identify Wine Defects
DESCRIPTION:As wine afficionados\, we have all experienced this.  We have carefully chosen and ordered a bottle of wine at a restaurant. The waiter returns\, opens it and pours us that first taste. Something about it doesn’t seem quite right but we indicate our approval anyway.  Then as soon as the waiter walks away\, we begin to second guess our decision. Is this really how this wine is supposed to taste? Is that fizzy attribute supposed to be there? Is that musty odor a problem or not? \nIf you’ve ever been in that situation\, you know that uncomfortable feeling and the self-doubt about speaking up.  Should we call the waiter over and send it back?  Is the wine really all that bad?  So you suffer through the evening with something you don’t enjoy. \nTo educate and train our members\, the OCWS is once again offering a workshop to help you identify wine defects. It will be held at the home of OCWS member\, Don Mayer\, in Yorba Linda\, on Sunday\, June 8\, from 2 – 5 pm. \nThis class will give you the knowledge to determine the quality of a wine you are served.  With that knowledge\, you will also gain the confidence to question a wine which doesn’t meet that quality standard. \nIndustry experts acknowledge that with corked bottles\, up to 5% of wine has attributes defined as a defect. However\, restaurant returns do not match those numbers. The reason is that many wine consumers are not confident or adequately trained in recognizing a wine defect. \nIn 2024\, the expert judges at the OCWS Commercial Competition’s rejected 45 bottles. In 2023\, 55 bottles were rejected. These numbers are lower than the industry averages\, however\, they also shipped direct from the winery to our Cellar and did not sit in distributor or store warehouses or on shelves for an extended period of time. \nThis OCWS workshop is designed to take advantage of our competition judges’ expertise. You will get the opportunity to sample the faulty wine rejected by judges and compare it to the fault-free version actually judged. The workshop will be structured to provide a comparison between a “good” and “bad” bottle of the same wine. From this\, you will learn to identify the same attributes that prompts competition judges to reject a bottle of wine. Multiple examples of the same fault will be used so you can confidently identify them. \nThe workshop will be organized into groups so participants can identify the differences between the “good” and “bad” wines and describe the attributes of the defect. If possible\, a variety of wines with different faults will be used giving you more examples of faulty wines. With the knowledge gained from this workshop\, you’ll be able to identify a defective wine and be more confident in calling over that waiter to get a fresh bottle. \nSignups for this workshop are now open on the OCWS website. SUMMARY:Mini Tasting: French versus Italian Wines
DESCRIPTION:Both France and Italy are recognized around the world for outstanding wines. France is second in the world with the amount of wine consumed per person\, followed closely behind by Italy\, which is ranked third in per person wine consumption. \nFrench wine is often associated with elegance and refinement\, thanks to its centuries-old classifications and strict regulations. Regions like Bordeaux and Burgundy are globally renowned for producing complex\, age-worthy wines\, with Bordeaux excelling in blends of Cabernet Sauvignon and Merlot\, and Burgundy specializing in Pinot Noir and Chardonnay. Additionally\, Champagne\, the sparkling wine from northeastern France\, is a symbol of luxury and celebration worldwide. French winemaking emphasizes terroir—the idea that the land\, climate\, and geography profoundly shape the wine—giving each appellation its distinct identity. \nOn the other hand\, Italian wine stands out for its diversity\, accessibility and deep cultural ties to food. Italy boasts a staggering number of grape varieties\, with over 500 documented indigenous types\, many of which are rarely found outside the country. Iconic regions such as Tuscany and Piedmont produce world-class wines like Chianti\, Brunello di Montalcino\, and Barolo\, while Prosecco from Veneto has become a popular sparkling wine globally. Italian wine is often crafted with a focus on pairing with meals\, as it plays a central role in the country’s culinary traditions. \nFor our next Mini-Tasting\, we will explore five French and five Italian wines to compare and contrast and determine if participants have a preference for one country’s wine over the other. \nIf you are interested in hosting please contact Don Mayer (Don.Mayer0709@gmail.com). SUMMARY:Wine Defect Identification Workshop
DESCRIPTION:As wine afficionados\, we have all experienced this.  We have carefully chosen and ordered a bottle of wine at a restaurant. The waiter returns\, opens it and pours us that first taste. Something about it doesn’t seem quite right but we indicate our approval anyway.  Then as soon as the waiter walks away\, we begin to second guess our decision. Is this really how this wine is supposed to taste? Is that fizzy attribute supposed to be there? Is that musty odor a problem or not? \nIf you’ve ever been in that situation\, you know that uncomfortable feeling and the self-doubt about speaking up.  Should we call the waiter over and send it back?  Is the wine really all that bad?  So you suffer through the evening with something you don’t enjoy. \nTo educate and train our members\, the OCWS is offering a new workshop to help you identify wine defects.  It will be held at the home of OCWS member\, Don Mayer\, in Yorba Linda\, on Saturday\, June 15 from 1 – 4 pm. \nThis class will give you the knowledge to determine the quality of a wine you are served.  With that knowledge\, you will also gain the confidence to question a wine which doesn’t meet that quality standard. \nIndustry experts acknowledge that with corked bottles\, up to 5% of wine has attributes defined as a defect.  However\, restaurant returns do not match those numbers. The reason is that many wine consumers are not confident or adequately trained in recognizing a wine defect. \nIn 2022\, the expert judges at the OCWS Commercial Competition’s rejected 55 bottles.  In 2023\, 34 bottles were rejected. These numbers are in line with the industry averages\, which suggest that we\, including competition judges\, will all encounter a bad bottle from time to time. \nThis new OCWS workshop is designed to take advantage of our competition judges’ expertise. You will get the opportunity to sample the faulty wine rejected by judges and compare it to the fault-free version actually judged.  The workshop will be structured to provide a comparison between a “good” and “bad” bottle of the same wine. From this\, you will learn to identify the same attributes that prompts competition judges to reject a bottle of wine.  Multiple examples of the same fault will be used so you can confidently identify them. \nThe workshop will be organized into groups so participants can identify the differences between the “good” and “bad” wines and describe the attributes of the defect. If possible\, a variety of wines with different faults will be used giving you more examples of faulty wines. With the knowledge gained from this workshop\, you’ll be able to identify a defective wine and be more confident in calling over that waiter to get a fresh bottle. \nSignups for this workshop are now open on the OCWS website. SUMMARY:Pinot Noir Mini Tasting
DESCRIPTION:Many consider Pinot Noir the “holy grail” of wine. This temperamental grape varietal requires warm daytime and cool evening temperatures and is partial to coastal climates. The Burgundy region of France’s Cote-d’Or region is well known for Pinot Noir where only Chardonnay is planted in greater abundance. In California\, plantings began in the 1940s with a significant push in Sonoma starting in the 1960s. Today\, high-quality Pinots are produced in Sonoma\, Mendocino and Santa Barbara counties of California\, as well as in Oregon and Washington. \nWhile Pinot Noir is quite well known as a red wine\, it has three close cousins that are also interesting.  Pinot Grigio/Gris is a very popular white wine. Pinot Blanc is less well known but is an excellent white wine. Pinot Noir is genetically unstable and occasionally a vine will have one or more canes that produce white (Pinot Blanc) grapes. Finally\, Pinot Meunier is one of the three main grape varieties used in Champagne (along with Pinot Noir and Chardonnay). \nPinot Noir has great variation. One of the major factors affecting Pinot Noir is the amount of time spent in oak. From France\, Pinot Noir is rustic\, earthy and acidic. From Sonoma\, it’s lush with rich black cherry flavors and higher in alcohol than French Pinot Noir. \nHosts: Mini-Tastings are held at various host sites around Orange County. DESCRIPTION:Signups are now open on the OCWS website for the next Winemakers Group quarterly meeting and potluck.  It will be held on Saturday\, February 25\, 1:00pm to 5:00pm.  We will also have a short meeting to review our programs for the year and announce upcoming events.  Cost to attend is $5 per person to cover supplies.  All OCWS members are welcome\, you don’t need to be a winemaker to attend. \nThe La Habra-area meeting location will be announced approximately 1 week prior to the event.  Due to limited parking at the host site\, attendees are asked to carpool.  There is a nearby park with ample parking where people can meet up and carpool.  Parking details will be provided when the meeting location is announced. \nEach attendee\, or couple\, is asked to bring a potluck dish (appetizer\, salad\, side dish\, or dessert) ready to serve a small portion to 8 people.  Please bring any serving utensils necessary for your dish and a bottle of wine per person (homemade or commercial) to share.  Plates\, napkins and tableware will be furnished.  New winemakers\, this is an excellent opportunity to see what our group is all about and sample some of the great wines we produce. \nWinemakers\, did you get grapes last Autumn or are you processing wines from earlier vintages?  Make sure they stay protected from wine-damaging organisms.  Our SO2 testing team led by Mike Paz will be conducting tests for your wines from 10:00am to noon on the same day and location prior to the potluck meeting.  This continues to be a very important service we do for the group as winemakers need to know how much sulfite to periodically add to the wines for protection against unwanted bacteria and yeast. \nTesting fee is $5 per sample.  Bring a 100ml sample of each wine\, enough to test twice in case the test needs to be repeated.  Please email Mike by February 17th at Michael.winemaker@icloud.com with the number of tests needed and the types of varietals to be tested.  It is important that we know ahead of time how many tests will be done so we can purchase enough supplies prior and have them on hand. \nWe will need some volunteers to help set up prior to and help clean up after the event.  We will also need someone to help with parking control/direction prior to the meeting.  Contact Ed Reyes ed@ocws.org if you can help. \nRemember\, attendance at this event is limited so sign up now!

DESCRIPTION:We haven’t had a Syrah/Petite Sirah Mini-Tasting for quite some time. These two grapes are known for creating very interesting\, food-worthy wines which should pair well with holiday comfort food. \nWhile Petite Sirah is not nearly as widely planted as Syrah\, there are a number of very good examples available\, especially from California. Syrah originated in the Rhone Valley of France\, but is widely planted in Australia and California. DESCRIPTION:This is an invitation only free event that is a great way to meet other new members and the Board of Directors as well as learning more about what the OCWS has to offer so you can get the most out of your membership. \nDate:               Sunday\, March 20\, 2022 \nTime:              2:00 to 4:00 p.m. \nLocation:        Yorba Linda area.  The exact location will be emailed to those who have RSVP’d 3-5 days prior to the event \nAttire:              Casual (the event will be indoors). \nWine\, water and light appetizers will be served. \nPlease be sure to wear your name badge. \nThis event is restricted to new members who joined on or after October 1\, 2019 and who have not previously attended a new member mixer.  Attendance is limited according to the maximum occupancy of the venue. \nCONSISTENT WITH CURRENT OCWS POLICY\, PROOF OF VACCINATION WILL BE REQUIRED.   \nRSVP online at www.ocws.org by selecting New Member Mixer under Events.
