SUMMARY:Winery Program - Dry Creek
DESCRIPTION:Join us to hear the story of Dry Creek Vineyard and the Stare Wallace family. It isn’t one of fairy tales. Their story is about a dedicated family working day and night for five decades to turn what many considered an idealistic pipedream into a reality that revolutionized the California wine industry\, making Double Gold wine. \nAfter a trip to California\, founder Dave Stare packed up his wife and kids in a mint green station wagon to carve out his path in the wine industry. Upon his arrival\, Dave began taking winemaking classes at UC Davis as a graduate student. On the weekends\, he spent time looking at vineyard land from Monterey to Mendocino. When Dave saw a rundown 55-acre prune orchard across the street from the Dry Creek General Store in Sonoma\, Dave realized that he had found his dream location. \nToday the 185-acre Dry Creek Vineyard is one of the last truly private\, family-owned\, iconic wineries consistently producing 90+ point wines. The second generation is firmly committed to a “no compromises” philosophy producing world class\, appellation-focused\, varietal-defining wines. They have shifted their winemaking practices and vineyard management to maximize flavors and reflect their home region. To sum it all up\, in a world where things are getting bigger and faster\, this legacy wine family is taking a smaller and slower approach. \nThis evening starts with a light\, sit down plated dinner. The cost of the meal and tasting is $70 for members and $75 for guests. \n\nThe hotel room location will be announced in April\nDoors will open at 6 p.m.\nDinner begins promptly at 6:30 p.m. (You can bring wine to have with dinner)\nAfter dinner\, we will have a short presentation about upcoming event.\nFollowed by the winery presentation and tasting.\n\nThe menu selections are listed below. Dinner will start with a salad of baby spinach salad\, candied pecans\, wild strawberries\, sweet onions and vinaigrette dressing. The dinner entrée selections are: \n\nFried chicken breast with white pepper gravy\, mashed potatoes and green beans\nSeared local halibut\, grilled corn salsa\, wild rice pilaf\, honey-roasted tri-color carrots\nGrilled eggplant steak\, summer squash\, snow-pea confit\, basil-infused Marinara sauce (VEGETARIAN)\n\nBe sure to pick up your meal ticket at the check-in table to show the waiter your entrée. Please select your meal carefully. Meals are ordered in advance and cannot be changed at the event. Be sure to wear your name badge. \nSign up on the OCWS website to attend this event. Attendees will self-park in the hotel garage. Bring your parking ticket to the event. Instructions will be provided for validating free parking. \nVolunteers are needed\, please indicate when you sign up to attend this event: \n\nHelp to place agendas on tables\nHelp with check-in from 5:30 to 6:30 p.m.\nHelp to pour wine for the tasting\n\nMembers may bring their own wine to enjoy and share during dinner. Please drink responsibly. \nBecause we contract each meal that you selected with the hotel\, the last day to sign up\, change your entrée\, or cancel and receive a refund is Sunday\, April 5. \n– CL Keedy\, Rich Skoczylas\, Winery Program Co-Coordinators

SUMMARY:Fallbrook Winery
DESCRIPTION:Due to uncontrollable events\, our May Winery Program has changed and we are proud to bring award winning Fallbrook Winery. This event has moved to Friday\, May 16. \nNestled in the heart of southern California is Fallbrook Winery. A visit to them is a short drive from Orange County where they rest between the Pacific Coast and the Pala Mesa Mountains and produce the highest quality red and white varietals. The original Fallbrook Winery opened in 1981 and was used primarily for champagne production through the late 1980s. In the mid 1990s\, the winery started replanting with Bordeaux varietal clones including Cabernet Sauvignon\, Merlot\, Cabernet Franc\, Petit Verdot\, and Malbec. \nThe topography of the region creates an ideal microclimate\, with warm days\, cool nights\, hillside vineyards and decomposed granite soil. The grapes develop the optimal sugar and acid levels needed to create rich\, full-bodied and balanced wines. All red grapes are hand-picked and bin fermented to allow for optimal fermentation conditions. The manual punch downs during fermentation enhances the intensity of the fruit and permits the winemaker greater control over the winemaking process. \nWe are excited to have their Head Winemaker\, Euen Parker\, visit us for this tasting. Euen was educated in New Zealand and France and has consulted throughout Spain and the United States. He has won numerous awards at Fallbrook Winery and is a judge in the OC Fair Commercial Wine Competition. \nThis evening starts with a light\, sit-down plated dinner. The cost of the meal is $62 for members and $67 for guests. Each attendee must pick up a menu card with their name to show your server the entree you have selected. \nDinner begins promptly at 6:30 p.m. Arriving before this time will make it easier for you to find a seat. After dinner\, we will have a short presentation about upcoming events. \nThe menu selections are listed below. Dessert will be caramel flan: \n\nGrilled chicken with roasted corn & poblano salsa\, served with chef’s choice starch and vegetables\nGrilled salmon\, shiitake mushrooms & asparagus hash\, fresh grilled lemon\, served with chef’s choice starch and vegetables\nVegetarian – Stuffed quinoa pepper on arugula\, heirloom tomato\, broccolini and porcini mushroom ragu\n\nA meal ticket will be at the check-in table for you to show the waiter your entrée. SUMMARY:Russian River Vineyards
DESCRIPTION:Russian River Vineyards winemaker Giovanni “Gio” Balistreri will be our featured speaker. He comes from four generations of farmers\, and he would not have it any other way. Gio is a farmer\, first and foremost. \n \nTo produce great wine\, Gio believes that you must first produce excellent fruit. It is the essential character and flavor of that fruit\, when it is harvested\, that will determine its potential to become a superior wine. There is no shortcut. You must be there and manage the crop at every step. \nThe Russian River Valley is one of the world’s greatest winemaking regions where true devotees of great wine are familiar with the magic of this valley.  So\, just over a decade ago\, he set out to make the most of an incredible environment to make great wine. The Russian River area enjoys warm summer days that are important for sugar production in grapes and cool night temperatures to preserve the acidity in the grapes.  This provides a combination to achieve and maintain the delicate balance of sugar and acid.  These attributes\, combined with rich and diverse soil conditions\, make the Russian River Valley a winemaker’s dream for Gio to work his magic. \nThis evening starts with a light\, sit-down plated dinner. The cost of the meal is $62 for members and $67 for guests. \nDinner begins promptly at 6:30 p.m. Arriving before this time will make it easier for you to find a seat. SUMMARY:Korbel Champagne Cellars - Winery Program
DESCRIPTION:Korbel was stablished in 1882 in Sonoma County’s Russian River Valley. They produce the United States’ most popular méthode champenoise champagne. The true measure of Korbel’s success during its 140 years can be seen in the impact it has had on American consumers and its presence at various celebrations throughout the years\, including the past 10 presidential inaugurations. Owned and managed by the Heck family since 1954\, Korbel currently makes 11 California champagnes and a limited amount of still wine. In a separate facility\, Korbel also produces three California brandies and imports Prosecco from Italy. \nWe are truly fortunate to have Paul Ahvenainen return for this tasting. It’s been 10 years since he visited us in February 2015. Back then\, Paul was the winemaker; now he is Vice President – Operations and Winemaking. He oversees all wine and brandy production\, winemaking\, grower relations\, maintenance and quality control. Paul\, who has been with Korbel for 37 years\, has been essential in the growth\, production and consistent quality that has earned Korbel numerous gold medals throughout the years. Paul is also one of our judges at the Commercial Wine Competition. \nThis evening starts with a light\, sit down plated dinner. The cost of the meal is $62 for members and $67 for guests. SUMMARY:Winery Program – Bushong Vintage Company
DESCRIPTION:To kick off the 2025 Winery Program\, we proudly welcome Jason Bushong\, proprietor and winemaker of Bushong Vintage Company in Paso Robles.
