DESCRIPTION:Winemakers\, are you making wine this year? Is this your first time making wine from fresh grapes? Not sure if you’re ready for the upcoming harvest? Do you need a refresher course before getting grapes? \nIf you answered yes to any of these questions then you need to join us at our pre-crush winemaking seminar. The class will be helpful to new and experienced winemakers alike. It will be held on Saturday morning\, September 6\, from 10:00 am – noon at the Silverado Canyon home of one of our winemakers. There will also be some experienced winemakers on hand to answer questions. \nThis class will: \n\nGuide you through the basic procedure for making wine from fresh grapes\nDescribe the equipment and supplies needed\nPrepare you for what to expect at various points in the winemaking process\nWalk you the OCWS grape purchase program and how it works\n\n  \nReserve your spot in the class by contacting Ed Reyes at: ed@ocws.org \nSO2 testing will also be held at the same location that day. SUMMARY:Learn the Basics of Making Kit Wines
DESCRIPTION:If you’ve ever wanted to learn winemaking\, here’s your chance. John Lane from our Winemakers Group will be conducting a Kit Winemaking Class on Saturday\, June 28 at Ed Reyes’s home in Laguna Hills. This is a great beginner’s class. All OCWS members are welcome to attend. \nA wine kit contains most everything you need to make a batch of wine: grape concentrate\, additives\, oak\, basic equipment and instructions. It’s like following a recipe and having all the ingredients\, only you’ll make wine instead of a meal. A kit can produce two to three cases of wine\, ready to enjoy in about three months. It’s a fun and easy way to get started. You only need an area about the size of a large coat closet to make it happen. \nFor aspiring winemakers\, this class will teach you the basic skills you’ll need to make wine. Kits are a great springboard to making wine from grapes. Not sure if winemaking is for you? This class will give you an understanding of the winemaking process to better appreciate what it takes to produce a glass of wine. \nSince our first kit winemaking class more than 12 years ago\, over 200 OCWS members have taken part. Many of our new winemakers started from these introductory classes. Using kits\, many members have produced medal-winning wines at the OC Fair Home Wine Competition. \nIn this class you will learn: kit selection\, equipment needed\, space requirements\, step-by-step kit instructions\, monitoring your wine throughout the process\, racking/clarifying\, storage/aging and bottling. This is a “hands-on” class. John will take you through the process using two separate kits. You’ll start an Italian Verdicchio white wine in the first half of the class. In the second half\, you’ll finish and bottle an Italian Valpola\, a deep-colored red wine\, which you’ll get to take home. \nCost to attend is $32 and attendance is extremely limited. The class will last roughly four hours.  Coffee and breakfast muffins will be served before the class. We will have a lunch break around the halfway point. SUMMARY:Citrus Winemaking Class
DESCRIPTION:OCWS President Carolyn Christian needs your help. She has nearly a dozen backyard citrus trees that are bursting with fruit. You can help take it off her hands and learn to make wine at the same time. The Winemakers Group will show you how. \nWe will be conducting a citrus winemaking class Saturday\, April 5\, at Carolyn’s home in La Habra Heights. You will get to pick and juice oranges. OCWS winemaker Kevin Donnelly will teach you how to turn that citrus juice into wine. We will provide the yeast\, additives and instructions for you to take home\, along with your fresh juice\, where you will complete the winemaking process. You will also get a list of winemaking mentors to contact in case of questions. \nKevin has been making wine from grapes and a variety of other fruit for many years. His citrus wines have earned numerous awards at the OC Fair Home Wine Competition\, including several Double Gold awards last year. \nMaking wine from fruit is similar to making wine from grapes but the turnaround is much faster. With most fruit wines\, you can make a batch in only a few months. This is a great way for experienced winemakers to hone their skills. For a new winemaker\, it’s a great way to get some experience before making the jump to grapes. Plus\, the equipment needed to make wine from citrus is the same as that needed to make wine from grapes. \nThe citrus picking and winemaking class will last roughly five hours. There will be a short break with snacks served. Cost to attend and participate is $32. Participants will get the citrus juice\, yeast\, additives and instructions to take home and turn that juice into wine. For an extra $17\, participants may also bring a plus one (spouse or friend) who can attend and enjoy the day. I’m sure Kevin will bring some of his award-winning citrus wines for all to enjoy. \nDetailed event instructions\, location and parking information will be sent to attendees approximately one week prior to the event. Right after you sign up you will get information describing the equipment you will need to have ready at home to complete the winemaking process. \nFirst-time winemakers\, be prepared to spend around $140\, beyond the class cost\, for equipment and bottles. You will finish with about 25 bottles of citrus wine. The equipment can be used for future batches of citrus and grape wine\, making them much cheaper to produce. \nSign up now on the OCWS website. DESCRIPTION:The Winemakers Group will present a wine blending educational seminar Sunday\, April 7 in the Wine Courtyard at OC Fair and Event Center.  OCWS winemaker Ed Reyes will explain the wine blending basics\, then team you with others to create blends. \nAll OCWS members are welcome to attend this NEW\, “hands-on” class.  Though highly useful to winemakers\, everyone will learn something from this fun and informative class.  Winemakers\, if you’re processing several varietals\, learn to create something unique through blending.  Non-winemakers\, learn how blending can make ordinary wines better. \nThe class will be divided into two parts.  In part 1\, you will learn the simple steps involved in making a blend\, how to approach blending two or more wines\, when to blend\, and when not to.  In part 2\, you’ll team with others to make your own wine blends from different varietals we will provide. \nCost is $20 per person.  Light snacks will be served.  Signups will open March 1 on the OCWS website.  Whether you’re a winemaker or not\, you’re sure to learn something from this fun NEW seminar.

SUMMARY:Fruit Winemaking Class
DESCRIPTION:Summer is the time for delicious fruit from backyard trees.  But they often produce more than you can eat.  Did you know you can make wine from all those delicious peaches\, plums\, nectarines\, apricots\, figs\, and more?  Fruit can be made into dry or sweet wines\, just like grapes.  The Winemakers Group will show you how as we continue to bring you educational opportunities to learn or hone those winemaking skills. \nOCWS winemaker\, Don Phillips\, will be conducting a fruit winemaking class Saturday\, August 19\, at his home in La Habra Heights.  Don has numerous fruit trees on his property and has been making fruit wines for years.  His fruit winemaking journey began when he wanted to do something with all his extra backyard fruit. \nDon’t have a fruit tree?  You probably know a few neighbors or friends who do.  Store-bought fruit works too but generally it’s not as ripe and flavorful as what you’d get from a backyard tree.  Whatever the source\, you’d want to make wine with only fruit that’s good enough to eat.  Save ripened fruit by freezing it. \nMaking wine from fruit is similar to making wine from grapes but the turnaround is much faster.  With most fruit wines\, you can make a batch in only 3-4 months. \nThe fruit winemaking class will last roughly 4 hours.  There will be a short break with light snacks served.  Cost to attend is $25.  Sign up now on the OCWS website.  So\, start saving that fruit now and you’ll be ready to make wine when you attend the class. \nThe annual OC Fair Homewine Competition always features numerous fruit wine entries.  Yours could be in next year’s competition. \nEd Reyes\ned@ocws.org

SUMMARY:Introductory Class Ideal for Aspiring Winemakers - Kit Winemaking Class
DESCRIPTION:If you’ve ever wanted to learn to make wine\, here’s your chance.  John Lane from our Winemakers Group will be conducting a Kit Winemaking Class on Saturday\, June 17\, at the OC Fair and Event Center.  This is a great introductory class for learning how to make wine. \nA wine kit contains most everything you need to make a batch of wine: grape concentrate\, additives\, oak\, basic equipment and instructions. It’s like following a recipe and having all the ingredients\, only you’ll make wine instead of a meal. A kit can produce two to three cases of wine\, ready to enjoy in about two months. \nSince our first kit winemaking class 10 years ago\, approximately 175 OCWS members have taken part.  Over half of our new winemakers started from these introductory classes. Using kits\, many members have produced medal-winning wines at the OC Fair Home Wine Competition. Kits are a great springboard to making wine from grapes. \nAt this class you will learn kit selection\, equipment needed\, space requirements\, step-by-step kit instructions\, monitoring your wine throughout the process\, racking/clarifying\, storage/aging and bottling. \nJohn will demonstrate the process using two separate kits\, a Chardonnay to begin to class and a Chilean Malbec to finish. At the end of the class\, participants will bottle the Malbec and get to take it home. \nCost to attend is $25 and attendance is extremely limited. The class will last roughly four hours. There will be a short break with light snacks served. Sign up now on the OCWS website to attend. DESCRIPTION:Open to Full OCWS Membership \nGet into the holiday spirit and celebrate with the Winemakers Group at our annual Holiday Party and Potluck.  This year’s festivities will be Saturday\, Dec 17\, 2022\, 4pm – 8pm at the East Lake Village Association Clubhouse in Yorba Linda. \nThe clubhouse is located on the community lake.  The nearby area and lakeview homes are decorated for the season and at night\, the twinkling Christmas lights reflecting off the water will surely put you in the holiday spirit. \nThis is always a wonderful social event to celebrate the Holiday Season and enjoy the fruits (wine) of our labors. \nSignups for this event are now open on the OCWS website.  For OCWS members\, the cost is $15 per person to cover decorations and the facility’s rental.  Ticket price for non-members is $20.  A member may purchase a ticket for one non-member guest. \nThis is a potluck event.   Please bring one dish per person or couple to serve between 8-12 people\, and one bottle of wine per person\, either homemade or commercial.  Dress will be nice casual.  There is plenty of free parking in the clubhouse lot or on the street. \n(Don’t worry about the “No Parking” sign – it only applies after 2am 🙂 \nAttendance is limited and this event always sells out quickly so be sure to sign up today!  I look forward to seeing you there. \nEd Reyes \ned@ocws.org

DESCRIPTION:It’s time to celebrate another successful Home Wine Competition.  Join us at our next quarterly meeting and potluck on Saturday\, July 9\, from 1:00 – 4:00 pm.  The South County beach location will be announced two weeks prior to the event.  There is a minimal cost of $5 per person to cover supplies.  Signups for the meeting are now open on the OCWS website. \nEach attendee\, or couple\, is asked to bring a potluck dish to feed 8 (appetizer\, salad\, side dish\, or dessert)\, any serving utensils necessary\, and a bottle of wine per person (homemade or commercial) to share.  Plates\, napkins and tableware will be furnished.  We will be able to heat up any food if needed. \nWe’re hoping to taste many of the award-winning wines from the OC Fair Home Wine Competition.  Two of our own OCWS winemakers took home the top prize in “Best of Show” categories: \n\nJim Kerins’ 2021 Tempranillo won Best of Show – Red\nStuart Fricke’s 2020 Gewurtztraminer won Best of Show – White\n\nIn addition\, many of our talented winemakers earned double gold and other awards.  For new and aspiring winemakers\, this is your chance to meet\, mingle and learn from our experienced winemakers.  We will also have a short meeting to review our programs for the year and announce upcoming events. \nAs usual\, we will have SO2 testing on the same day and location prior to the potluck meeting. \nThis testing continues to be a very important service we do for the group.  It is important that winemakers know how much sulfite to periodically add to the wines for protection against spoilage from unwanted bacteria. \nThe testing team led by Mike Paz will be conducting SO2 tests from 10:00 am until noon.  Please email Mike by July 1 at: Michael.winemaker@icloud.com with the number of tests you will need.  It is important we know ahead of time how many tests will be done so we can purchase supplies prior and have them on hand. \nTesting fee is $6.00 per sample.  Bring a 100ml sample of each wine\, enough to test twice in case the test needs to be repeated.  Sensory evaluation will also be done\, if requested. \nWe ask that once your samples have been tested any “visiting” be done in another area.  It is important that we socialize away from the testing area as is can become noisy and distracting for those conducting the tests. \nVolunteers are needed to help set up prior and help clean up after the event.  Contact Ed Reyes at 949-382-9548 if you can help. \nAttendance at this OCWS members only event is limited to 40 people so sign up now!

SUMMARY:Peppertree Canyon—Orange County’s Well-Hidden Gem
DESCRIPTION:I recently had the distinct honor of visiting Peppertree Canyon Farm to interview Owner/Winemaker\, Lynn Hess\, and found not just a winemaker\, but a person with great passion for our environment\, both globally and locally. And someone who\, along with her husband\, Mike\, has created a small oasis in the midst of the Tustin hills of Orange County that they lovingly refer to as “Tustiny.” \nLynn started winemaking from kits with the OCWS and initially\, never intended to be a winemaker but\, after not finding what she felt was a suitable winemaker for their venture\, she took enology and viticulture classes everywhere she possibly could\, from Davis to Mira Costa and San Marcos to Temecula. She was mentored by winemakers at a number of wineries in San Diego and Temecula and eventually interned at Hart. Her passion was then up and running at what could only be described as full stride. \nLynn and Mike purchased four acres in the Tustin hills in 2013\, with Mike’s vision of planting a Tuscan farm and making olive oils and Brunellos. They planted over 100 olive trees (Frantoios\, Pendolinos and Leccinos) and over 1\,400 vines\, mostly Sangiovese. The property was fill dirt before they began creating their spectacular home and surrounding property. They have formed a wonderful partnership of love and respect\, as Lynn is the winemaker\, while Mike makes the olive oils\, which are milled within a few hours of the olives being hand-harvested. \nTheir determination to help the environment has led Peppertree Canyon to be a one-of-a-kind\, fully sustainable property that boasts over 50 fruit trees\, including fig\, pomegranate\, persimmon\, plum\, pluot\, apricot\, nectarine\, cherry\, apple\, mango\, kiwi\, and avocado\, along with over 20 citrus trees of every varietal one can imagine. \nThey also have a seasonal herb and vegetable garden\, as well as an assortment of berries. Lynn and I spoke of the bees that inhabit the property and their honey making endeavors which currently produces only enough annually for their family and friends. She and Mike are so environmentally conscientious that when the beehives infringe on an area of the property unacceptable to them\, they relocate the hives to other areas of the property. Lynn has also designed and built their own reservoir that collects rainwater and run off from neighboring properties\, which irrigates their property and keeps the use of public water to a minimum and used only when absolutely necessary. \nLynn is most proud of their authenticity\, with their wine being 100% OC grown onsite. They only make one wine\, a predominantly Sangiovese blend (90% Sangiovese\, 5% Petite Syrah\, 5% Cabernet Sauvignon) from biodynamically farmed grapes they planted and nurture. \nIf I wrote everything I learned from Lynn and every aspect of Peppertree Canyon that impressed me\, this article would take up this entire edition of The Wine Press. Suffice it to say\, I highly recommend attending the OCWS Winemakers’ Group webinar featuring Lynn on Saturday\, May 22 at 3 pm and experiencing Lynn’s passion and commitment for yourself.
