SUMMARY:Winery Program - Dry Creek
DESCRIPTION:Join us to hear the story of Dry Creek Vineyard and the Stare Wallace family. It isn’t one of fairy tales. Their story is about a dedicated family working day and night for five decades to turn what many considered an idealistic pipedream into a reality that revolutionized the California wine industry\, making Double Gold wine. \nAfter a trip to California\, founder Dave Stare packed up his wife and kids in a mint green station wagon to carve out his path in the wine industry. Upon his arrival\, Dave began taking winemaking classes at UC Davis as a graduate student. On the weekends\, he spent time looking at vineyard land from Monterey to Mendocino. When Dave saw a rundown 55-acre prune orchard across the street from the Dry Creek General Store in Sonoma\, Dave realized that he had found his dream location. \nToday the 185-acre Dry Creek Vineyard is one of the last truly private\, family-owned\, iconic wineries consistently producing 90+ point wines. The second generation is firmly committed to a “no compromises” philosophy producing world class\, appellation-focused\, varietal-defining wines. They have shifted their winemaking practices and vineyard management to maximize flavors and reflect their home region. To sum it all up\, in a world where things are getting bigger and faster\, this legacy wine family is taking a smaller and slower approach. \nThis evening starts with a light\, sit down plated dinner. The cost of the meal and tasting is $70 for members and $75 for guests. \n\nThe hotel room location will be announced in April\nDoors will open at 6 p.m.\nDinner begins promptly at 6:30 p.m. (You can bring wine to have with dinner)\nAfter dinner\, we will have a short presentation about upcoming event.\nFollowed by the winery presentation and tasting.\n\nThe menu selections are listed below. Dinner will start with a salad of baby spinach salad\, candied pecans\, wild strawberries\, sweet onions and vinaigrette dressing. The dinner entrée selections are: \n\nFried chicken breast with white pepper gravy\, mashed potatoes and green beans\nSeared local halibut\, grilled corn salsa\, wild rice pilaf\, honey-roasted tri-color carrots\nGrilled eggplant steak\, summer squash\, snow-pea confit\, basil-infused Marinara sauce (VEGETARIAN)\n\nBe sure to pick up your meal ticket at the check-in table to show the waiter your entrée. Please select your meal carefully. Meals are ordered in advance and cannot be changed at the event. Be sure to wear your name badge. \nSign up on the OCWS website to attend this event. Attendees will self-park in the hotel garage. Bring your parking ticket to the event. Instructions will be provided for validating free parking. \nVolunteers are needed\, please indicate when you sign up to attend this event: \n\nHelp to place agendas on tables\nHelp with check-in from 5:30 to 6:30 p.m.\nHelp to pour wine for the tasting\n\nMembers may bring their own wine to enjoy and share during dinner. Please drink responsibly. \nBecause we contract each meal that you selected with the hotel\, the last day to sign up\, change your entrée\, or cancel and receive a refund is Sunday\, April 5. \n– CL Keedy\, Rich Skoczylas\, Winery Program Co-Coordinators

Over the years\, he has learned that winemaking is a lifelong journey. Every season brings its own challenges and opportunities and the key is to blend experience\, intuition and a bit of luck to create that perfect wine. Miro combines modern winemaking techniques with time-tested\, Old-World practices\, always aiming to let the grapes speak for themselves. \nAs winemaker for Trentadue Miro’s “day job\,” he also produces award-winning wines under his own brand of “Miro Cellars\,” where he is the winemaker\, proprietor\, salesman and cellar rat. \nThis evening starts with a light\, sit down plated dinner. SUMMARY:Varietal Hour - Wines Under $12
DESCRIPTION:The OCWS Varietal Hours continue with new themes and new attendees! \nIf you haven’t joined our Varietal Hours by now\, here is your chance. As we continue into 2025\, we have exciting new themes and are experiencing new members joining us. \nAnd the best thing? They are FREE. What started as a way of gathering during the COVID quarantines has blossomed into quality time with friends\, both old and new. And the things we have learned and been taught by this group are priceless. \nHere is our challenge to all of you: If you haven’t already attended one of these Varietal Hours\, please attend one. Yes\, just one.  We promise you four things. 1) You will have fun.  2) You might just learn something\, OR you might teach us something. 3) You won’t regret spending that hour of your life. 4) And you won’t even have to drive home. \nSo picture this…your own comfortable furniture. A glass of wine in your hand. Chatting with fun friends\, some you know\, some you may not. Right there in your own house with friends\, old and new. And here’s the best part: You don’t even have to clean up everyone’s mess! We’re always happy to have new members join the fun and meet some people who enjoy wine. \nEach event has a theme\, but we never “kick anyone off the island\,” so it doesn’t matter if you follow the theme. Part of the fun is finding a wine to fit the theme. The setting is very casual\, with stories told about each of the wines we’re drinking\, what we do (or don’t) like about them\, where we got them and more. \nRegardless of your knowledge of wine\, the Varietal Hours have something for everyone. Varietal Hours are held 7 to 8 p.m. every other Tuesday. \nAll you need is a computer (or phone) and internet connection. If you are new to the Varietal Hours or to Zoom\, please feel free to contact Don Phillips at Don@ocws.org for help and information\, even if it means contacting him days before the event\, and he will walk you through the process and even do a short Zoom meeting\, just for you\, to get you comfortable with the process. \nThe event is open to all OCWS members\, but sign-ups are required. Please log on to the OCWS website to register for the event no later than 7 p.m. (24 hours before the event)\, the Monday night before the event. Couples only need to sign up for one person since this event is via Zoom. A link for the Zoom meeting will be emailed to you on the day of the event. \nWe are also looking for hosts for upcoming Varietal Hours. It’s fun and easy to do. Please contact Don at the above email if you wish to host\, or with any questions or suggestions. \nWe look forward to Zooming with you soon at one of the future Varietal Hours. SUMMARY:How to Identify Wine Defects
DESCRIPTION:As wine afficionados\, we have all experienced this.  We have carefully chosen and ordered a bottle of wine at a restaurant. The waiter returns\, opens it and pours us that first taste. Something about it doesn’t seem quite right but we indicate our approval anyway.  Then as soon as the waiter walks away\, we begin to second guess our decision. Is this really how this wine is supposed to taste? Is that fizzy attribute supposed to be there? Is that musty odor a problem or not? \nIf you’ve ever been in that situation\, you know that uncomfortable feeling and the self-doubt about speaking up.  Should we call the waiter over and send it back?  Is the wine really all that bad?  So you suffer through the evening with something you don’t enjoy. \nTo educate and train our members\, the OCWS is once again offering a workshop to help you identify wine defects. It will be held at the home of OCWS member\, Don Mayer\, in Yorba Linda\, on Sunday\, June 8\, from 2 – 5 pm. \nThis class will give you the knowledge to determine the quality of a wine you are served.  With that knowledge\, you will also gain the confidence to question a wine which doesn’t meet that quality standard. \nIndustry experts acknowledge that with corked bottles\, up to 5% of wine has attributes defined as a defect. However\, restaurant returns do not match those numbers. The reason is that many wine consumers are not confident or adequately trained in recognizing a wine defect. \nIn 2024\, the expert judges at the OCWS Commercial Competition’s rejected 45 bottles. In 2023\, 55 bottles were rejected. These numbers are lower than the industry averages\, however\, they also shipped direct from the winery to our Cellar and did not sit in distributor or store warehouses or on shelves for an extended period of time. \nThis OCWS workshop is designed to take advantage of our competition judges’ expertise. You will get the opportunity to sample the faulty wine rejected by judges and compare it to the fault-free version actually judged. The workshop will be structured to provide a comparison between a “good” and “bad” bottle of the same wine. From this\, you will learn to identify the same attributes that prompts competition judges to reject a bottle of wine. Multiple examples of the same fault will be used so you can confidently identify them. \nThe workshop will be organized into groups so participants can identify the differences between the “good” and “bad” wines and describe the attributes of the defect. If possible\, a variety of wines with different faults will be used giving you more examples of faulty wines. With the knowledge gained from this workshop\, you’ll be able to identify a defective wine and be more confident in calling over that waiter to get a fresh bottle. \nSignups for this workshop are now open on the OCWS website. Light snacks will be served.  Specific address information and other details will be sent to attendees approximately one week prior to the event. \nSpace is limited so sign up today!

SUMMARY:Varietal Hour - Cooking with Wine
If you are new to the Varietal Hours or to Zoom\, please feel free to contact Don Phillips at studiodon1@gmail.com for help and information\, even if it means contacting him days before the event\, and he will walk you through the process and even do a short Zoom meeting\, just for you\, to get you comfortable with the process. SUMMARY:Varietal Hour - Fruit Wine
DESCRIPTION:New Night: Now the Fun Happens on Tuesdays!\nThe OCWS Varietal Hours have moved to Tuesdays!  No more Monday night conflicts! \nIf you haven’t joined our Varietal Hours by now\, here is your chance! \nFirst of all\, they are FREE. Sure\, you say\, nothing is free\, and if it is then it’s not worth my time.  Au contraire my friends! What started as a way of gathering during the COVID quarantines has blossomed into quality time with friends\, both old and new. And the things we have learned and been taught by this group are priceless! Add to that a different night of the week and no more missing Monday Night Football to attend! \nSo here is our challenge to all of you: If you haven’t already attended one of these Varietal Hours\, please attend one. Yes\, just one. We promise you three things. 1) You will have fun. 2) You might just learn something\, OR you might teach us something! 3) You won’t regret spending that hour of your life! And you won’t even have to drive home! \nSo picture this…Your own comfortable furniture. A glass of wine in your hand.  Chatting with fun friends\, some you know\, some you may not. Right there in your own house with friends\, old and new. And here’s the best part! You don’t even have to clean up everyone’s mess! We’re always happy to have new members join the fun and meet some people who enjoy wine. \nEach event has a theme\, but we never “kick anyone off the island\,” so it never matters if you follow the theme. The setting is very casual\, with stories told about each of the wines we’re drinking\, what we do (or don’t) like about them\, where we got them\, and more. \nRegardless of your knowledge of wine\, the Varietal Hours have something for everyone. Varietal Hours will be held 7 to 8 p.m. every other Tuesday. Please log on to the OCWS website to register for the event no later than 7 p.m.(24 hours before the event)\, the Monday night before the event.
