SUMMARY:Kit Wine Class - Learn to Make Wine
DESCRIPTION:If you’ve ever wanted to learn winemaking\, here’s your chance.  John Lane from our Winemakers Group will be conducting a Kit Winemaking Class on Saturday\, June 29 at the OC Fair and Event Center.  This is a great beginner’s class.  All Wine Society members are welcome to attend. \nA wine kit contains most everything you need to make a batch of wine: grape concentrate\, additives\, oak\, basic equipment and instructions.  It’s like following a recipe and having all the ingredients\, only you’ll make wine instead of a meal.  A kit can produce 2-3 cases of wine\, ready to enjoy in about two months.  It’s a fun and easy way to get started.  You only need an area about the size of a coat closet to make it happen. \nFor aspiring winemakers\, this class will teach you the basic skills you’ll need to make wine.  Kits are a great springboard to making wine from grapes.  Not sure if winemaking is for you?  This class will give you an understanding of the winemaking process to better appreciate what it takes to produce a glass of wine. \nSince our first kit winemaking class over ten years ago\, approximately 200 OCWS members have taken part.  Over half of our new winemakers started from these introductory classes.  Using kits\, many members have produced medal winning wines at the OC Fair Home Wine Competition. \nIn this class you will learn: kit selection\, equipment needed\, space requirements\, step-by-step kit instructions\, monitoring your wine throughout the process\, racking/clarifying\, storage/aging\, bottling.  This is a “hands-on” class.  John will take you through the process using two separate kits.  You’ll start a New Zealand Sauvignon Blanc wine kit in the first half of the class.  In the second half\, you’ll finish and bottle a French Bordeaux-style wine\, which you’ll get to take home. \nCost to attend is $25 and attendance is extremely limited.  The class will last roughly 4 hours.  Coffee and breakfast muffins will be served before the class.  We will have a lunch break around the halfway point.  Lunch will be catered by Bill Forsch from our Winemakers Group who will be serving his homemade sausage sandwiches.   Wines from our Winemakers Group will be served with lunch. \nDon’t miss this educational opportunity!  Sign up now on the OCWS website to attend.  Who knows\, maybe next year you’ll be entering your wines in the 2025 OC Fair Home Wine Competition. \nEd Reyes\ned@ocws.org

SUMMARY:Citrus Winemaking Class
DESCRIPTION:OCWS President Carolyn Christian needs your help. She has nearly a dozen backyard citrus trees that are bursting with fruit. You can help take it off her hands and learn to make wine at the same time. The Winemakers Group will show you how. \nWe will be conducting a citrus winemaking class Saturday\, April 5\, at Carolyn’s home in La Habra Heights. You will get to pick and juice oranges. OCWS winemaker Kevin Donnelly will teach you how to turn that citrus juice into wine. We will provide the yeast\, additives and instructions for you to take home\, along with your fresh juice\, where you will complete the winemaking process. You will also get a list of winemaking mentors to contact in case of questions. \nKevin has been making wine from grapes and a variety of other fruit for many years. His citrus wines have earned numerous awards at the OC Fair Home Wine Competition\, including several Double Gold awards last year. \nMaking wine from fruit is similar to making wine from grapes but the turnaround is much faster. With most fruit wines\, you can make a batch in only a few months. This is a great way for experienced winemakers to hone their skills. For a new winemaker\, it’s a great way to get some experience before making the jump to grapes. Plus\, the equipment needed to make wine from citrus is the same as that needed to make wine from grapes. \nThe citrus picking and winemaking class will last roughly five hours. There will be a short break with snacks served. Cost to attend and participate is $32. Participants will get the citrus juice\, yeast\, additives and instructions to take home and turn that juice into wine. For an extra $17\, participants may also bring a plus one (spouse or friend) who can attend and enjoy the day. I’m sure Kevin will bring some of his award-winning citrus wines for all to enjoy. \nDetailed event instructions\, location and parking information will be sent to attendees approximately one week prior to the event. Right after you sign up you will get information describing the equipment you will need to have ready at home to complete the winemaking process. \nFirst-time winemakers\, be prepared to spend around $140\, beyond the class cost\, for equipment and bottles. You will finish with about 25 bottles of citrus wine. The equipment can be used for future batches of citrus and grape wine\, making them much cheaper to produce. \nSign up now on the OCWS website. The annual OC Fair Home Wine Competition always features numerous fruit wine entries. Yours could be in an upcoming competition. \n—Ed Reyes\, ed@OCWS.org

John Lane from our Winemakers Group will be conducting a Kit Winemaking Class on Saturday\, June 28 at Ed Reyes’s home in Laguna Hills. This is a great beginner’s class. In the second half\, you’ll finish and bottle an Italian Valpola\, a deep-colored red wine\, which you’ll get to take home. \nCost to attend is $32 and attendance is extremely limited. The class will last roughly four hours.  Coffee and breakfast muffins will be served before the class. We will have a lunch break around the halfway point. Lunch will be accompanied by wines from our Winemakers Group. \nDon’t miss this educational opportunity! Sign up now on the OCWS website to attend. SUMMARY:Gearing Up for the 50th Anniversary Home Wine Competition
DESCRIPTION:Home Wine Competition Entry Tips \nWinemakers\, the entry deadline for the 50th annual OC Fair Home Wine Competition is May 22. New this year is a Best of Show Rose award to go with Best of Show awards for red\, white\, fruit and dessert wines. If you plan to submit wines\, here are some things you can do to give them their best chance to show well.\nMake sure you’re using sound winemaking practices. This means tasting regularly\, topping off carboys or barrels and maintaining SO2 to prevent oxidation and spoilage. Oxidized wine is a common fault and it can happen to any wine. I’ve tasted commercial wines that suffered from oxidation\, right out of the bottle.\nIf you haven’t bottled the wine yet\, you’ll need to do it soon. Taste your wine before bottling to make sure there’s nothing wrong with it. Notice I said taste\, not drink. As tempting as it is\, don’t drink during bottling. It’s too easy to make a mistake or forget a critical step with a foggy mind. I celebrate with a cold beer after bottling.\nWhen it comes to bottling\, make sure that’s the only thing you’re doing on bottling day. Make any chemical additions or adjustments at least a week prior to bottling. This will allow enough time for those changes to integrate into the wine. If you’re making a blend\, your blending components and their percentages should already be determined. You don’t want to be figuring out your blend at the last minute.\nResist the urge to submit anything that has just been bottled. Bottle shock is a real phenomenon. I’ve found my red wines need at least 30 to 45 days to recover after bottling.\nDon’t skimp on packaging if you’re shipping your wine to the competition. You want your wine to get here safely after all your effort. You can also deliver submissions to the OCWS office\, Monday through Friday during regular business hours. Competition wines are stored in a temperature-controlled environment after they’re received so you don’t have to worry about exposure to extreme temperatures.\nIf you’re entering the label competition\, send an original label. It shows much better than a photocopy. Make sure the label is entered into its correct category. Sometimes labels have characteristics that might make it a worthy contender in more than one category\, say both humorous and viticultural. In this case I recommend entering it into the category where it makes the better impression.\nFinally\, make sure you complete the entry form clearly and thoughtfully. Enter your wines into their correct categories. If you’re entering a specific varietal wine\, say Zinfandel\, make sure there is at least 75% of that varietal in the wine. Rose wines should be entered as such so they’re not judged against their red counterparts. Specify the grape’s AVA\, if applicable\, and vintage in the entry form “description” section.\nIf you’re entering a blend\, be sure to specify the percentages of each blend component in the “description” section as well. Fruit wines should be entered into their appropriate category. Note the wine’s sweetness level and enter that into the appropriate category. All that information will be on the judges’ score sheets for their consideration.\nI know a lot of this isn’t rocket science. But by putting care into your wine and thoughtfulness into the entry process beforehand\, you can help them to show their best on competition day.\n—Ed Reyes\,\ned@OCWS.org \nThe OC Fair Home Wine Competition is Saturday\, June 6 at the OC Fair and Event Center. To learn more about serving as a judge for the competition\, contact John Lane at John@OCWS.org.
